Page 2a+b of 4 <br /> Plan Narrative for David Reis and Laura Forrester Proposed Bistro <br /> David Ries and Laura Forrest are planning to re-model and convert an existing structure into a <br /> small Cafe/Bistro. The original use of the structure was a three bedroom residence and <br /> somewhere along the line a portion of the residence was turned into a hair salon. The sanitary <br /> permit history found at the Burnett County Zoning Office was for a three bedroom residence <br /> state sanitary permit#239600 issued July 19't' 1995. <br /> The proposed Caf&Bistro will consist of seating for up to 15 patrons with 2 employees. The <br /> menu will consist of a variety of Panini sandwiches,pizza and some baked goods to go with <br /> coffee. Cafe hours will run approximately from 7:00 am to 7:00 pm. The food will be prepared <br /> using a pizza oven and a Parini grill or press and will be served in baskets or paper plates. There <br /> will be no dishwasher or deep fryer on the premises. A concerted effort will be made to wipe of <br /> cooking utensils; pans and grills prior to putting them into the dishwater. <br /> An exterior grease interceptor will be instal led to satisfy the Department of Safety and <br /> Professional Services requirement in SPS382 and the owners are currently working with Kathy <br /> Lembezeder representative of the Dept. of Health Services to insure the equipment in the food <br /> preparation area meets their code. <br /> The design wastewater flow will include the following: <br /> Sizing Calculations: <br /> 2 Employees x 13 gallons 26 gallons <br /> 15 patrons Drive in restaurant with indoor seating x 10 ;gallons— 150 gallons <br /> (w/meals all paper service) <br /> One bedroom apartment I x 100 gallons= 100 gallons <br /> Total estimated flow of 276 gallons x 1.5 design factor=414.00 gallon designs flow. <br /> Proposed Design Flow of 414 gallons/day for the proposed use change. <br /> The current sanitary system has a design wastewater flow of 450 gpd and consists of an older <br /> 750 gallon steel septic tank, a newer 1000 gallon Shaw Concrete septic tank(1995)and a 12 ft. x <br /> 54 ft. drain field ( 1995). The existing drain field and the 1000 gallon concrete septic tank are in <br /> good operating condition. The existing 750 ballon steel septic tank has likely served its life and <br /> will be replaced with a new 1000 Wieser Concrete grease interceptor. A copy of this narrative <br /> will be submitted both to Burnett County and the Dept. of Safety and Professional Services for <br /> review of the project. <br /> With the use change from a residential wastewater flow to what will be considered a commercial <br /> flow we may be changing the constituents that make up the wastewater itself. <br /> The policy for processing high strength wastewater of POWTS plans is dated April of 2009. The <br /> purpose of this document is to describe how the Department of Commerce (at the time) will <br /> process POWTS design submitted for review-and approval for facilities that may produce <br />
