Page 6a+b of 6 <br /> Plan Narrative for Big Water Properties LLC for <br /> "Bumps Bar" on Devils Lake <br /> The management for the new"Bumps Bar"being constructed on the shore of Devils Lake in <br /> Burnett County has decided to install a holding tank for the wastewater generated in the food <br /> preparation area and a designated sink in the bar for emptying unfinished alcoholic beverages. <br /> The rationale for this was to allow flexibility in their menu offerings down the road should they <br /> desire to incorporate the use of a grill or deep fryer. <br /> To date we have applied for and received approval for a grease interceptor(Trans ID#2521293) <br /> and an At-Risk Wastewater producing facility in the form of a bar serving meals with paper <br /> service(Trans ID#2521310).The current intention is to serve pizza and heat and serve pre- <br /> packaged sandwiches etc. My belief is that the At-Risk dispersal cells and septic tank will he <br /> installed less the grease interceptor as designed.This will provide additional system capacity for <br /> future growth of the business and a very good safety factor in the sanitary system serving the <br /> bathrooms as it is not a given that by merely separating out the kitchen waste that the <br /> concentrated bathroom wastewater generated will not flirt with or exceed the maximum <br /> threshold of 220 mg./1 of BODS that allows for the subsurface discharge of effluent. <br /> I will be separating out the kitchen waste from the bathroom waste to show the estimated flow <br /> from the kitchen multiplying that figure by the five day holding tank requirement then adding in <br /> the required grease interceptor capacity combing it into a single tank. <br /> The kitchen waste will consist: <br /> 50 Patrons Bar w/meals x 4 gallons(kitchen)=200 gallons <br /> For a total estimated flow of 200 gallons. <br /> The bathroom waste will consist of: <br /> D 3 Employees x 13 gallons =39 gallons <br /> D 50 patrons bar x 4 gallons =200 gallons <br /> A 1 floor drain in the mechanical room x 25 gallons=25 gallons <br /> For a total estimated flow of 264 gallons x 1.5 =396 DWF directed septic tank and dispersal <br /> cells <br /> To complete the holding tank capacity for the kitchen waste we multiply the 200 gallon <br /> estimated flow x 5 days equals a total of 1000 gallons. <br /> Next we add in the grease interceptor requirement of 500 gallons as calculated below to arrive at <br /> the combined holding tank size of 1500 gallons. <br /> Grease Interceptor Sizing per SPS 382.34(Sx2)b <br /> Grease trap sizing: C = SxHxA <br /> S=Number of Seats H=Hous per day meals are served,at least 6 hours but not more than 12 <br /> P=Meal periods per day 1,2 or 3.A=Appliance factor w/dishwasher= 1.0 <br /> C = 50 x 10 x 1 =500 gallons of interceptor capacity. <br />
