This letter is to review Wisconsin Food <br /> Code requirements related to licensure and operation. You recently had a consultation by phone with Jim <br /> Kaplanek, Chief of the Food Safety and Recreational Licensing program, who also reviewed your food <br /> operation scenarios. <br /> Wine Country Lunch Program: <br /> The Wine Country lunch program requires reservations and there is a set menu that patrons order from. <br /> You are working with The Wren in Luck and Espresso Cabin in Grantsburg who prepare and deliver the <br /> preordered, individual pre-packaged meals to your establishment. <br /> Your staff does not engage in food handling except that you hold the product cold, until the consumer <br /> arrives and picks up the order. <br /> Requirements would include but not be limited to providing ANSI approved cold holding equipment and a <br /> hand sink installation complete with hand washing aids. <br /> The food service would be limited to pre-packaged individual meals and could be licensed as a <br /> prepackaged restaurant. <br /> Food manager certification is not required for pre-packaged establishments, but is highly encouraged. <br /> Tapas on Friday <br /> Guest chefs bring a preordered number of food servings based on information received from your <br /> establishment. The tapas are made by the chefs and must be prepared at a licensed full-service kitchen. <br /> The meals must be ordered ahead of time and the caterer is responsible for bringing the food items to the <br /> establishment already prepared, serving the food, and tearing down and taking back the leftovers. This <br /> operation as described does not require you to have a restaurant license, but does require the caterer to <br /> be licensed or be employed by a licensed restaurant. <br /> As discussed with Mr. Kaplanek, the food may not be served and paid for at the time of service by the <br /> consumer to the caterer or the establishment. This would not meet the definition of a catered event. If <br /> food is being sold at your establishment, at a minimum, a moderate food permit would be required along <br /> with a code complying kitchen. <br /> Wisconsin.gov <br />
