Page 2 <br /> July 30, 2009 <br /> Sausage and Cheese Service <br /> Cheese and sausage service is not subject to licensure provided it is free and served at a tavern. A <br /> tavern is an operation that has been issued a class B liquor license. Provide documentation that the <br /> establishment has a class B liquor license. <br /> If the cheese and sausage is not free and/or the establishment is not a tavern, a restaurant permit is <br /> required. A full service food permit in the simple category might apply if there is food preparation such as <br /> slicing, cutting, plating, storage of meats and cheeses. <br /> Some food code requirements include: <br /> Wisconsin Food Manager Certification <br /> A cleanable kitchen/preparation area. <br /> Commercial refrigeration for potentially hazardous food <br /> Commercial utensil wash, rinse, sanitize sink with drain boards or commercial dishwasher with prewash <br /> sink. <br /> Wall-mounted or free standing hand sinks with nonhand controls in each work and serving area. <br /> Application <br /> Enclosed is an application for your use. A permit can be considered for issuance after receipt of a <br /> completed application with applicable fees and an onsite preinspection that finds compliance with the <br /> food code. <br /> The Wisconsin Food Code does not exempt compliance with any local ordinances or the Wisconsin <br /> commercial building and plumbing code as documented by Department of Commerce.
