Page 1 a+b of 5 <br /> Individual Site Design and Plan Narrative for the Big Water Properties LLC <br /> Bar on Devils Lake <br /> Big Water Properties LLC is relocating the Bar that use to serve the campground known as <br /> Bumps Devils Lake Park Resort across the street on a lakeshore lot of Devils Lake. <br /> The bar owners will apply for a license under DHS Chapter 196 for what is known as a Pre- <br /> Packaged Restaurant with the following definition: DHS 196.03(4m) "Pre—packaged restaurant" <br /> means a restaurant that serves only individually wrapped single food servings that are prepared <br /> and packaged off—premise by a licensed processor with preparation on the premise limited to <br /> heating and serving. <br /> In discussing the project with one of the owners Mr. Eric Kramer, he stated that meals will be <br /> served in a basket and consist of hot sandwiches with potato chips or pizza. Very little food <br /> preparation will be required with food being cooked in a convection or microwave oven or the <br /> typical pizza oven. A three compartment sink will be onsite to facilitate in hand washing glasses <br /> and utensils used in food preparation with all paper liners discarded into the trash. There will be <br /> no dishwasher, grill or deep fryer on the premises. Employees will be instructed to wipe any <br /> greasy utensils or pans prior to putting them into the sink for washing to limit the amount of <br /> grease into the wastewater. <br /> The bar will be sized as follows: <br /> Sizing Calculations: <br /> 3 Employees x 13 gallons allons <br /> 2 Floor drain near the utility area by the water heater x 25 gallons =50 gallons <br /> 50 patrons Bar and Cocktail Lounge (w/meals all paper service) x 8 gallons=400 gallons <br /> Total estimated flow of 489 gallons x 1.5 design factor 733.50 gallon design flow. <br /> Proposed Design Flow of 750 gallons/day. <br /> The policy for processing high strength wastewater of POWTS plans dated April of 2009 <br /> discusses the plan review procedure for facilities that may produce influent to a POWTS soil <br /> dispersal component that exceeds the parameters set forth in SPS 383.44(2). This code section <br /> limits the quality of the influent discharging to a soil dispersal component to be equal to or less <br /> than the following: <br /> a. A monthly average of 30 mg/l fats. Oil and grease <br /> b. A monthly average of 220 mg/l of BODS <br /> c. A monthly average of 150 mg/1 TSS <br /> The soil application rates in SPS Table 383.44-3 were developed based on the assumption that <br /> typical residential wastewater would be applied to the soil.
